Baking for Theology

Who would have thought?  I don't see myself as much of a homemaker, and yet I am developing a surprisingly odd habit of baking on Wednesday nights.  I do have an incentive.  On Thursday mornings, Jake meets at 6am with a group of men from church for DTS (Dead Theologians Society) to discuss theology.  Of course, when Jake mentioned, before their first meeting, that they were going to have food, I was very quick to inform him that I would not be catering.  He didn't expect that I would - donuts and bagels from Walmart would do just fine.  Well, it just so happened that I had all of the ingredients to make pumpkin muffins the night before their first meeting.  So while Jake was at Awana, I decided to whip up a batch and provide some baked goods. I made sure that he knew - and that he let everyone else know - that this was a one-time-thing.  The following week, someone gave me a large zucchini from their garden, and I started thinking to myself  "I've never baked zucchini bread before".  So, Wednesday night rolled around, Jake was at Awana, and what did I do?  You guessed it - I  baked zucchini walnut bread (one loaf with nuts, one without...you can never be too cautious about allergies).  So much for not catering.  If I am honest with myself, I was beginning to enjoy it.  Then, this week, a friend at church (who's been sampling the baked goods on a weekly basis) gave me some rhubarb, along with a recipe for strawberry-rhubarb coffee cake.  Should I take that as a hint?  What would you do if you had rhubarb and a recipe which called for rhubarb?  Speaking of, I better quit blogging and get to my baking!

Thursday morning has come and gone, and the coffee cake has been consumed (I wrote the first part of this  post yesterday).  Turns out, one of the men told Jake this morning that I needed a break next week (do I?).  This thoughtful gentleman has volunteered his wife to provide some goodies.  Well, I guess it gives me one more week to think about what I want to concoct for the following week!
